International convention AVPN 3rd – 5th July 2012 Città della Scienza, Naples

The “Associazione Verace Pizza Napoletana” (The True Neapolitan Pizza Association) organises, from the 3rd to the 5th of July 2012, at the “Città della Scienza” (Bagnoli), an international convention which represents a huge chance of growth and comparison for AVPN members and sector operators.
The event will be liven up by workshops, seminars on products and ingredients, and of course by meetings between “insiders”. Together with the schedule of the convention, there will be trips to the most interesting places of the city and wine and food testing.
During the event there will take place also the “Olympics of Neapolitan Pizza”, a contest developed on 5 issues (as Olympic rings): Classic Pizza, Fantasy Pizza (innovation of traditions stated by AVPN rules), Artistic Pizza, Fried Pizza and Mastunicola (a circle of dough, lard, extra-virgin oil, basil and pepper to bring out the paste).
The contest will give the leading role to the Real Neapolitan Pizza as thought in Naples, and competitors will move between Margherita, Marinara and any other kind of pizza, still using ingredients not in contrast with Naples gastronomy and traditions.
Awards will be presented to people and to countries: in the competition, indeed, will participate pizza-makers from the whole world and a prize will be given to the nation which will obtain the highest scores in the various fields.

ore 15.50 - seminar on the handmade dough
ore 16.30 - company workshops
ore 17.00 - seminar on leavening, in collaboration with the Federico II University of Naples
ore 17.30 - Master of food pizza by Slow Food
ore 16.00 to 20.00- beginning of the agenda and shifts for handmade kneading
ore 19.00 - AIS Seminar “Bubbles and fried pizza”
Wednesday, July 4th: “The five elements”
ore 08.00 – first shifts for the handmade kneading
ore 11.00 – start of the competition and categories evaluation: “Classic Pizza”, “Fantasy Pizza” and “Mastunicola”
afternoon - – Seminars and workshops by the participating companies. Master courses organized by Slow Food and tasting and courses on the pizza and wine combination by the Italian Sommelier Association
ore 18.00 to 20.00 – beginning of the agenda and shifts for the handmade kneading of “Fried Pizza” and “Artistic Pizza”
Free evening
Thursday, July 5th: “The senses”
ore 09.00 – start of the competition and “Fried Pizza” and “Artistic Pizza” evaluation
ore 14.00 – Buffet and Pizza
ore 16.00 – international meeting and AVPN convention, the constitution of the Federation of the Italian Associations of the pizza world
