There was a time, not so long ago, when serious eaters would never consider a trip to Hudson, Wis. Those days are over. If you think that way now, you'll miss out on some good eating, including this new spot.
Like the name implies, Brick's Neapolitan Pizza is about real Neapolitan-style pie, which means it's baked in a blazing wood-fired brick oven and topped with varying combinations of fresh mozzarella, San Marzano tomatoes, Mediterranean sea salt, basil and extra-virgin olive oil. Owner Kevin Bordenave trained with the Verace Pizza Napoletana Association so his pizza would meet that group's strict standards.
The space itself is small and loud with pared-down looks. (Look hard enough and you'll notice the giant wall sculpture is actually a couple of flames.) There's quick and friendly full service and an irresistible menu of pizzas, panini, salads and desserts.
Open for lunch and dinner daily. Lunch prices, $3 to $10.
