From the imperfect pizza to the table of those in need

How Neapolitan Pizza fights food waste

April 29 marks Stop Waste Food Day, the global awareness day dedicated to fighting food waste. The urgency is real: according to FAO estimates, one third of all food produced worldwide ends up as waste every year, with an enormous impact both on the planet's resources and on communities suffering from hunger. On this day, we want to share two stories from the world of Neapolitan pizza — two different approaches, one shared goal.

"Pizza un Gesto d'Amore": students' pizzas, every day on the table of those who need them

Anyone familiar with the professional training courses run by the Associazione Verace Pizza Napoletana knows that every training day is a whirlwind of activity: dough-making, stretching, round after round of baking — dozens and dozens of pizzas produced by students as part of their learning journey. For years, all of that food risked becoming waste.

The turning point came with an agreement reached with the Caritas Diocesana of Naples, giving rise to the initiative "Pizza un Gesto d'Amore" — Pizza, a Gesture of Love. The director, Sister Marisa Pitrella, has access to a detailed calendar of all training activities throughout the month. Every day, she — or someone on her behalf — comes to collect all the pizzas made by students that day. From there, they are distributed across the city: to families in need, social canteens, and people waiting for a warm meal each evening.

A simple, concrete, daily system. Training goes on, waste disappears, and every pizza becomes an act of solidarity.

In Helsinki, the "imperfect" pizza always finds a home

Mario Salvatore, pizzaiolo and owner of Via Tribunali in Helsinki, has tackled the issue of food waste on multiple fronts, with the pragmatism of someone who works on the floor every single day.

His first tool is the ResQ app: when a pizza comes out of the oven with an imperfection — a hole, an irregular shape, or simply one too many — instead of being thrown away, it gets listed on the app and sold at a reduced price. The result? Happy customers enjoying a great pizza at a lower cost, and zero waste in the kitchen.

But Mario also looks further upstream: he has developed an internal system to reduce dough waste, optimising the management of raw ingredients and cutting down on scraps right at the production stage.

And then there is the question of the cornicione — that thick, pillowy crust that customers too often leave on the plate. Starting next month, Via Tribunali will introduce a selection of dips to accompany the pizza: sauces and spreads for dipping and savouring every last bite. A small addition, hugely popular with the Nordic clientele, that could make all the difference.

 

Two stories, two different corners of the world, one direction: respect for food, for the work of those who produce it, and for the people who need it. Because true Neapolitan pizza is never wasted — it is shared.
