Sourdough Web Masterclass

The program is distributed in 4 days and into 90-minute lessons which will be held by the AVPN Instructor Salvatore De Rinaldi.
The four day technical study aims to train:
- Who wishes to deepen their knowledge on the preparation, working and management of natural yeast
- Who wants to offer its customers a dough that reminds of ancient flavors.
A high-profile, limited-number training (max 4 people) which allows you to acquire theoretical and practical skill in the production of sourdough and in managing the dough with this acid mother.  
The course will be held for technical reasons on Monday May 25th, Wednesday May 27th, Thursday 28th and Friday 29th with Zoom.

The cost of the course is € 500,00 and includes the native english interpreter.

DAY 3, May 27th - 4 PM Italian Time: THE REFRESHMENT

Theory: What is refreshment

Refreshment of sourdough

 

DAY 4, May 28th - 4 PM Italian Time: PREPARATION OF THE DOUGH

Theory: Lactic acid bacteria, fermentation and maturation.

Hand dough with sourdough

Preparation of the sourdough in the Esmach machine

 

DAY 5, May 29th - 3 PM Italian Time: COOKING

Theory: the oven and how to cook the pizza

Preparation and cooking pizzas
