Fior di Latte of Agerola
Fior di Latte di Agerola is a fresh, spun-pasta cheese made from only Italian raw milk. The main element that characterizes it and distinguishes it from other products is the ancient Agerola manufacturing technique. Our fior di latte for pizza, both classic and in its smoked version, is made specifically for the catering, it is in fact slightly less humid so is drier and stringy at the right point, while maintaining its unmistakable taste of fresh milk.
It is presented in its classic spherical shape in pieces of 500g and not already cut into cubes, because, as the most expert pizza-makers teach, Agerola's fior di latte for pizza should be cut fresh in the same day of its use to make it keep its freshness and release all its perfumes in cooking.
