Web Masterclass Roman-style “on peel pizza”

The on peel Pizza online course is a high-profile training course with limited number applications that allows you to acquire skills and high practical proficiency in the making of the on peel Pizza and its garnishing.

The in-depth technical course aims to train whoever desires to:

  • deepen their knowledge on the preparation and baking of high hydration indirect doughs

  • offer its customers an alternative product to the True Neapolitan Pizza.

The program is divided into 3-hour lessons (from 15.30 to 17.30) which will be held live from the Enosteria Lipen for 3 consecutive days, during which the students will have the opportunity to interact in real time with the teacher Corrado Scaglione to ask questions and constantly obtain clarifications.

A maximum of 6 students are admitted to each course and a participation certificate will be sent at the end of the 3 days. 

To attend this course it is necessary to have a high-speed internet connection and it is strongly recommended to use a personal computer or a tablet with the Google Chrome browser and Zoom installed.

  • dough techniques: pre-ferments and high hydration

2nd day: DOUGH STRETCHING AND BAKING 

  • the dough shaping
  • the correct dough stretching technique
  • baking in an electric oven 

3rd day: THE GARNISHING 

  • the “On Peel Pizza” usuals
  • ideas for an innovative garnis
